CHOCOLATE & PEANUT BUTTER SUPER SNACK

This is a snack, fat bomb, that will satisfy a quick craving. Creamy peanut butter rich with flavor and complemented with rich dark chocolate topping. This can be eaten within the week or kept frozen for those times of need. Either way, this is a treat that you need to keep it Keto.

Ingredients

Peanut Butter Balls

  • 8 oz Cream Cheese, softened
  • 1/2 cup Peanut Butter, Natural, no sugar
  • 2 Tbsp Monkfruit Sweetener
  • 1/4 cup Coconut Oil

Chocolate Drizzle

  • 1/2 cup Chocolate Chips, Keto Friendly
  • 2 tbsp Coconut Oil

Instructions

Peanut Butter Balls

  • Place all ingredients in a medium - large sized bowl. Using a hand mixer, or stand up, blend the ingredients together until creamy. Place in freezer to firm up for about 8-12 minutes.
  • Using a cookie sheet, line with parchment paper and scoop, #40 works great, out the peanut butter mixture on to the paper. Have cup of hot water available to dip scoop in to help avoid sticking between scoops.
  • Place in freezer for 5-10 minutes to harden.

Chocolate Drizzle

  • Combine coconut oil and chocolate chips in microwave mixing bowl and heat at 30 second increments until melted. Stir chocolate until consistent.
  • Drizzle over peanut butter balls and place in refrigerator until harden.
  • Store in refrigerator or freezer. If you freeze them, I have microwaved them for 20-30 seconds before eating.
