A good substitute for potatoes. Still a little high in carbs but has good flavor and will make you possibly forget potatoes. 3-4 net carbs per serving.
- 1 Medium jicama
- 1 tbsp Olive oil
- 1/2 tsp Paprika
- 1/2 tsp Garlic powder
- 1/2 tsp Onion powder
- pinch Cayenne pepper
- pinch himalayan salt
- Preheat oven 425°
- Peel jicama and cut into 1/4 inch matchsticks.
- Bring water to boil in medium saucepan over medium heat. Cook for about 10 minutes. If you would like to steam, about 15 minutes.
- Place jicama slices in a large bowl and toss with olive oil, paprika, garlic powder, onion powder, cayenne pepper and salt.
- Place in a single layer on a prepared baking sheet. Bake for 30-45 minutes or until crispy, turning halfway.
