KETO BUCKEYSE
Buckeyes are a great holiday tradition, and are a great snack for the year around Keto lifestyle. Bursting with almond butter and dark chocolate flavors. Just wonderful treat for anytime of the year. Great snack for 1 gram of net carbs with no baking.

Ingredients
Peanut Butter Ball
- 1 cup peanut butter or almond butter, no added sugar
- 2/3 cup coconut flour
- 1/3 cup Powdered Monkfruit sweetener,
Chocolate Coating
- 1/2 cup Lilly's Dark Chocolate Chips
- 1 tbsp coconut oil
Instructions
Peanut Butter Ball
- Mix the peanut butter (or almond butter), coconut flour, and sweetener and mix until consistent.
- Refrigerate for 20-30 minutes to allow mixture to harden slightly.
- On parchment paper, scoop peanut butter mixture into 1 oz scoops. Should make about 16-18.
- Refrigerate for about 60 minutes.
Chocolate Coating
- Microwave the chocolate chips at 30 second intervals. Stir between each interval, repeat until chocolate is smooth.
- Add coconut oil and mix.
Making the Buckeyes
- Stick a toothpick in each cold peanut butter ball and dip into chocolate mixture. Let excess drip off and set back on parchment paper. Repeat until all the peanut butter balls are covered with the desired amount of chocolate.
- Store in refrigerator. best served at room temperature.
