CHEESY VEGGIE CASSEROLE
This Keto breakfast is veggie feast smothered with cheese. Great vegetable flavors for the entire family
- 1.5 lbs zucchini, sliced thin
- 1.5 lbs yellow squash, sliced thin
- 1/2 cup onions chopped
- 3 eggs beaten
- 1/2 cup almond flour
- 8 oz butter
- 1 tsp Himalayan salt
- 1 tsp black pepper
- 4 oz grated mozzarella
- Slice squash and zucchini extra thin with mandolin
- Place in bowl with onions, eggs, almond flour, butter, salt and pepper.
- Place in greased casserole dish (use coconut oil or butter).
- Top with grated cheese
- Bake in 350 oven for one hour.
